Ingredients
2/3 c semi-sweet chocolate chips .
1 tsp vanilla extract .
1 tsp baking soda .
1/3 c canned milk (half & half if you prefer) .
1/4 tsp salt .
1 tsp baking powder .
1 egg .
1/2 c walnuts (optional) or pecans (optional) or semi-sweet chocolate chips (optional) .
1 c sugar .
1/3 c sugar .
1 1/2 c all-purpose flour .
1 tbsp butter .
For the Brownies .
For the Glaze .
1/3 c canola oil .
1 1/2 c fresh zucchini (finely shredded & drained) .
1/4 c cocoa
Directions
Step #1 Preheat oven to 350F & grease a 9 x 13 baking pan.
Step #2 Stir the first 4 ingredients by hand until well mixd.
Step #3 Drain any liquid from the shredded zucchini, add & mix until completely coated.
Step #4 Sift together the flour, baking powder soda & salt & add it to the zucchini mixture.
Step #5 Stir until the dry ingredients are evenly mixd & add any optional ingredients.
Step #6 In a separate bowl, mix half of the batter with the coca then spread evenly over the bottom of the baking pan.
Step #7 Spread the remaining batter over the top until the chocolate batter is covered.
Step #8 Bake at 350F for 25-30 mins or until lightly browned & the center tests done.
Step #9 Cool for about 5-10 mins, while you prepare the glaze.
Step #10 Combine sugar, butter & canned milk in a small pan & stir every once in awhile on stovetop until it begins to boil.
Step #11 Stir continuously for 1 min while the mixture boils then remove this from heat & add the chocolate chips.
Step #12 Stir until smooth & spread evenly over brownies (add a little more butter if needed for good spreading consistency).
