Chocolate Filled Meringues Recipe

Ingredients
  • 1/4 tsp cream of tartar
  • 1/2 c sugar
  • 2 egg whites
  • Dash salt
  • 1 c whipped topping
  • 1/4 c baking cocoa
  • 1 (8 oz) package cream cheese, softened
  • 1/4 tsp vanilla extract
  • FILLING:
  • 1 c confectioners' sugar
  • 1 (10 oz) package frozen sweetened sliced strawberries, thawed

Directions
  • Step #1 Place egg whites in a small mixing bowl; let this stand at about room temp for 30 mins.
  • Step #2 Beat on medium speed until foamy.
  • Step #3 Add cream of tartar, vanilla & salt; beat until soft peaks form.
  • Step #4 Gradually add sugar, 1 tbsp at a time, beating until stiff peaks form.
  • Step #5 Line a baking sheet with parchment paper.
  • Step #6 Spoon meringue into six mounds on paper.
  • Step #7 Using the back of a spoon, shape into 3-in.
  • Step #8 c.
  • Step #9 Bake at 300F degrees F for 35 mins.
  • Step #10 Turn off oven & do not open door; let meringues dry for 1 hr.
  • Step #11 Cool on a wire rack.
  • Step #12 For filling, beat cream cheese, in a mixing bowl, confectioners' sugar & cocoa until smooth & fluffy.
  • Step #13 Fold in whipped topping.
  • Step #14 Process the strawberries in a mixer or food processor/blender until pureed.
  • Step #15 To serve, spoon filling into meringue shells.
  • Step #16 Top with strawberry sauce.
