Heirloom Tomato Gratin Recipe

Ingredients
  • 3 tbsps plain breadcrumbs .
  • 2 tbsps fresh oregano .
  • 3/4 tsp salt .
  • 3 garlic cloves, sliced .
  • 4 large tomatoes, cored & cut into 1/4 inch thick slices .
  • 2 tsps thyme .
  • 1/2 tsp black pepper .
  • 1 tbsp extra-virgin olive oil .
  • 1/4 c parmesan cheese

Directions
  • Step #1 Heat oven to 450 degrees.
  • Step #2 Place tomato slices on paper towels; sprinkle with 1/2 tsp of the salt & let this stand for 15 mins,pat dry with paper towels.
  • Step #3 Coat a 2-quart oval baking dish with 1 tsp of the olive oil; sprinkle 1 tbsp of the bread crumbs over the bottom of baking dish.
  • Step #4 Place 1/2 the tomato slices in prepared baking dish(on top of the bread crumb), overlapping if necessary; season this with 1/8 tsp of the salt & 1/4 tsp of the black pepper.
  • Step #5 Sprinkle top 1 tsp of the olive oil, 1 tbsp of the oregano, & 1 tsp of the thyme over the top; TUCK in the garlic & sprinkle the remaining 2 tbsps bread crumbs over the top.
  • Step #6 Place the remaining tomato slices in the dish & season this with remaining 1/8 tsp salt & 1/4 tsp pepper; sprinkle remaining olive oil, oregano & thyme over the tomatoes.
  • Step #7 Bake in 450 degree oven for 30 mins; scatter Parmesan cheese on top; bake an extra 10 mins; remove gratin from oven & let this stand for 10 mins before serving, enjoy.
