Viennese Ice Cream Cake!!! Recipe

Ingredients
  • 1 milk chocolate candy bar, shaved .
  • 2 (5 1/2 oz) packages chocolate, caramel cookie bars (20 sticks total) .
  • pastry dough, bag & a # 6 star tip (or resealable plastic bag) .
  • Special Equipment .
  • 1 (8 oz) container frozen whipped topping, thawed .
  • 3/4 c sliced pecans, toasted .
  • 1 quart coffee ice cream, softened .
  • 1 quart vanilla ice cream, softened .
  • 3/4 c butterscotch caramel sauce

Directions
  • Step #1 Line a (9 1/4 by 5 by 2 3/4-inch) metal loaf pan with 2 layers of plastic wrap, allowing 3 inches of plastic to hang over pan sides.
  • Step #2 Using a rubber spatula, press 1/4 of the coffee ice cream into pan.
  • Step #3 Drizzle 1 tbsp of caramel topping over ice cream.
  • Step #4 Sprinkle top 1 tbsp of pecans over caramel.
  • Step #5 Spread 1/4 of the vanilla ice cream over nuts.
  • Step #6 Drizzle 1 tbsp of caramel topping over ice cream.
  • Step #7 Sprinkle top 1 tbsp of pecans over caramel.
  • Step #8 Freeze for 20 mins or until firm.
  • Step #9 Repeat layering of coffee ice cream, caramel, pecans, & vanilla ice cream 3 more times, freezing for 20 mins between each layering.
  • Step #10 Fold plastic overhang atop cake to cover.
  • Step #11 Freeze for 4 hrs or until frozen solid.
  • Step #12 To unmold, wrap hot damp towels around pan to loosen ice cream cake from pan.
  • Step #13 Fold back plastic from atop ice cream cake.
  • Step #14 Invert a large plate or serving platter atop the ice cream cake.
  • Step #15 Holding plate & pan together, invert cake onto plate.
  • Step #16 Remove pan from cake; peel off plastic wrap.
  • Step #17 Spoon whipped topping into pastry bag fitted with a star tip.
  • Step #18 Pipe stripes or fluted lines atop cake.
  • Step #19 Freeze for 1 hr or until whipped topping is frozen solid.
  • Step #20 Let cake stand at about room temp for 10 mins before serving.
  • Step #21 Meanwhile, cut side down, slice caramel cookie bars in half & arrange, around perimeter of cake.
  • Step #22 Sprinkle top chocolate shavings over cake.
  • Step #23 Cut cake crosswise into slices; transfer cake slices to serving plates.
