Regas' Creamed Spinach Recipe

Ingredients
  • 1/2 c hot water .
  • 1/2 c sour cream .
  • 1 1/8 tsps Tabasco sauce .
  • 4 (10 oz) boxes frozen spinach .
  • 1 1/2 c parmesan cheese .
  • 1 quart heavy whipping cream .
  • 1/2 c cold water .
  • 1 1/2 tsps salt .
  • 1/8 c instant chicken bouillon granules .
  • 1/2 c onions (minced) .
  • 1/3 c cornstarch .
  • 1 1/8 tsps garlic-flavored oil .
  • 4 tbsps butter (melted)

Directions
  • Step #1 Thaw & drain spinach using paper towels to absorb any remaining liquid.
  • Step #2 Place dry spinach in large casserole dish & set aside.
  • Step #3 Heat (do not boil) cream in saucepan over low-medium heat; set aside.
  • Step #4 Melt butter in large pot over medium high heat; add onion & garlic oil & saute until tender.
  • Step #5 Add hot water, tabasco, chicken base, salt & sour cream.
  • Step #6 Whisk until well mixed.
  • Step #7 Bring to a boil & stir in the hot cream.
  • Step #8 Place cornstarch in small bowl.
  • Step #9 Add water & stir this to dissolve cornstarch.
  • Step #10 Whisking continuously, add cornstarch mixture to boiling sauce.
  • Step #11 As sauce thickens, continue whisking to remove any lumps.
  • Step #12 Sauce should be smooth & thick.
  • Step #13 Add parmesan cheese & whisk to remove lumps.
  • Step #14 Add hot sauce to spinach & stir this to mix.
  • Step #15 Serve.
