Paad Thai - Shrimp (stir-fried Thai Noodles) Recipe

Ingredients
  • 4 tbsps vegetable oil .
  • 6 lemon wedges .
  • 2 lbs fresh shrimp, shelled & deveined .
  • 1 1/2 tsps paprika .
  • 6 tbsps fish sauce .
  • 1/4 c sliced preserved white radishes, rinsed to remove excess saltiness (optional) .
  • 4 eggs, beaten .
  • 1 (8 oz) package rice noodles (the wider ones, about the width of fettucine noodles) .
  • SAUCE .
  • 1 lb bean sprouts .
  • 1 (8 oz) package fried tofu, sliced thin .
  • 3 garlic cloves, minced .
  • 8 tbsps brown sugar .
  • 8 tbsps tamarind juice (or substitute vinegar) .
  • 1/2 c unsalted peanuts, sliced fine (or use food processor/blender) .
  • 1 onion, finely sliced .
  • 2 tsps chili flakes (to taste) .
  • 10 green onions, cut 2-inch long

Directions
  • Step #1 Soak the rice noodles in hot water to cover, for at least 30 mins.
  • Step #2 Drain & set aside.
  • Step #3 Prepare all the remaining ingredients to be ready to cook.
  • Step #4 Make the sauce - mix the tamarind juice (or vinegar),brown sugar, fish sauce, & paprika in a small saucepan.
  • Step #5 Stir & heat over med-heat/flame until it starts to boil, then lower the heat & let simmer the sauce for 10 mins.
  • Step #6 Taste for the proper balance of sweet/sour/salty, & adjust if necessary.
  • Step #7 Set aside.
  • Step #8 Heat 1 tbsp oil in large wok or non-stick skillet.
  • Step #9 Add eggs & scramble them.
  • Step #10 Remove eggs & set them aside when just done.
  • Step #11 Heat 1 tbsp oil in the wok or skillet & saute shrimp with 2 tbsp of the sauce.
  • Step #12 Remove & set aside as soon as the shrimp are pink (about 2 mins).
  • Step #13 Heat 1 tbsp oil in the wok or skillet & saute onion & garlic, adding about 2 tbsp sauce.
  • Step #14 Add noodles, stir well, adding more sauce to keep the noodles moist.
  • Step #15 If noodles become too dry, sprinkle with some water.
  • Step #16 Remove noodles & set aside.
  • Step #17 Heat 1 tbsp oil in the wok or skillet & saute fried tofu, preserved white radish, & 1 tsp chile flakes (or to taste).
  • Step #18 Add remaining sauce.
  • Step #19 Return noodles to pan with tofu mixture.
  • Step #20 Taste again, & adjust.
  • Step #21 Add cooked shrimp, bean sprouts, green onion, & scrambled egg.
  • Step #22 Lift & turn the noodles a few times to mix.
  • Step #23 Serve on the plate with a lemon wedge, & top this with sliced peanuts, & a few chile flakes.
