1 c parmesan cheese, freshly grated, good quality .
1/4 tsp nutmeg (optional)
Directions
Step #1 Place the salt In a large-ish pot of water & bring to a boil; add fettuccine & cook according to package directions for al dente; during the last 3 mins of cooking, add the broccoli.
Step #2 Drain in a colander, RESERVING 1 c of the WATER; set aside.
Step #3 Place the butter in the pot, reduce heat to medium-low ,and stir until melted; add 1/2 c of the reserved pasta water, then stir in the 1/3 c of the Parmesan cheese.
Step #4 Add the fettuccine & broccoli & the cayenne & nutmeg, if desired; toss.
Step #5 Remove from heat & sprinkle with another 1/3 c of the Parmesan cheese & the pepper, toss again.
Step #6 Adding more pasta water if the fettuccine is too sticky; serve in bowls & sprinkle with the remaining Parmesan cheese, enjoy.
