- 2 fresh mandarin oranges or 1 can mandarin orange sections .
- 1/4 c orange juice .
- 1/2 c of raspberry vinaigrette (bottled) .
- 1 tbsp honey .
- 1 dash salt or pepper .
- Dressing
Directions
- Step #1 Cut the tops off the beets & boil whole beets until tender -- about 15-20 mins.
- Step #2 Drain & cut into quarters.
- Step #3 Section the mandarin oranges into small pieces or if using canned, then drain the liquid from the oranges.
- Step #4 Put the quarter beets & mandarin oranges into a medium sized bowl.
- Step #5 Mix the dressing & pour over it.
- Step #6 Mix thoroughly.
- Step #7 Best to let this sit for 1/2 to allow the flavours to mix before serving.
