Thai Noodles With Curried Ground Beef Sauce Recipe

Ingredients
  • 2 tbsps fish sauce .
  • 1/2 tsp ground pepper .
  • 1/2 c cornstarch .
  • 1 onion, sliced .
  • 1 bunch romaine lettuce .
  • 1 tbsp vegetable oil .
  • 1 tbsp salt .
  • Condiment .
  • 3 c cherry tomatoes, cut in half .
  • sambal oelek .
  • 2 tbsps black soy sauce .
  • 3 tbsps garlic, sliced .
  • 4 tbsps black soy sauce .
  • 3 tbsps rice vinegar .
  • 2 (14 1/2 oz) cans chicken broth .
  • 1 lb ground beef .
  • 3/4 c water .
  • 3 tbsps brown sugar .
  • 2 tbsps curry powder .
  • 1 lb fresh rice noodles (these are not dried noodles, they're sold pre-cut in about 1/4-inch strips, or in sheets you can cut) .
  • 4 tbsps light soy sauce .
  • Spice uping ingredients

Directions
  • Step #1 Clean & cut lettuce into bite size pieces.
  • Step #2 Keep put in the fridged until ready to use.
  • Step #3 Separate noodles into strands & stir-fry in heated non-stick wok or skillet.
  • Step #4 Add 4 tbsp black soy sauce, & stir until noodles become brown & a little crispy on the bottom.
  • Step #5 Remove to a bowl, & set aside.
  • Step #6 Heat oil in the same wok, & saute garlic until aromatic.
  • Step #7 Add ground beef & stir this to break up meat & brown it.
  • Step #8 Add curry powder & ground pepper.
  • Step #9 Mix well until beef is done.
  • Step #10 Add sliced onion & tomatoes.
  • Step #11 Stir well & saute about 5 mins with the beef mixture.
  • Step #12 Add chicken broth to beef mixture & add seasoning ingredients.
  • Step #13 Taste, & adjust for proper balance of sweet/sour/salty.
  • Step #14 Mix cornstarch & water, & make a slurry.
  • Step #15 In a slow stream, add slurry to broth in pan, stirring constantly to keep it from getting lumpy.
  • Step #16 Boil until the sauce is thickened.
  • Step #17 Lower heat & simnmer a few mins.
  • Step #18 To serve, place lettuce on plates.
  • Step #19 Put noodles on the lettuce.
  • Step #20 Put a scoop of beef sauce on top of the noodles, spinkle with ground pepper & a little bit of Sambal oelek.
