Skillet Blueberry Cobbler Recipe

Ingredients
  • 2 tbsps water, if needed .
  • 3/4 c sugar (for biscuit topping) .
  • 8 tbsps butter (1 stick) .
  • 4 c fresh blueberries (can also use frozen, thawed at about room temp) .
  • whipped cream (optional) or vanilla ice cream, for serving (optional) .
  • 1 c self-rising flour .
  • 2 tbsps sugar (for fruit mixture) .
  • 1/4 tsp salt .
  • 3/4 c milk .
  • 1 tsp baking powder

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 Melt the butter in a 10 or 12-inch cast-iron skillet.
  • Step #3 Add blueberries (if using frozen, let fruit thaw at about room temp first) & 2 tbsps of the sugar.
  • Step #4 Sitr carefully & cook just until the berries begin to soften.
  • Step #5 If mixutre seems at all dry, add the water.
  • Step #6 Meanwhile, whisk together flour, in a medium bowl, baking powder, remaining 3/4 c sugar, & salt.
  • Step #7 Add the milk & stir this to make a thick batter.
  • Step #8 Spoon batter onto the fruit.
  • Step #9 Drag a spoon or spatula through batter to make streaks of white & blue.
  • Step #10 DON'T mix thoroughly.
  • Step #11 Bake until a tester inserted in the biscuit top comes out clean & the fruit is bubbling around the edges, about 20 mins.
  • Step #12 Serve with whipped cream or ice cream, if desired.
  • Step #13 Note: You can make this with fresh or frozen peaches or other berries as well.
  • Step #14 If you don't have a cast-iron skillet, you can use an ovenproof dish.
  • Step #15 You can heat the butter & fruit in a skillet & then scrape them into a baking dish to continue.
  • Step #16 The cobbler is best served warm directly from the pan.
  • Step #17 If you have leftovers or plan to keep for a while, transfer to a nonreactive container.
