Cinnamon-beef Noodles Recipe

Ingredients
  • 3/4 c low sodium soy sauce .
  • 2 lbs beef stew meat, cut into 1 1/2 inch cubes .
  • 2 tsps vegetable oil, divided .
  • 4 c hot cooked wide lo mein noodles or vermicelli .
  • 1/4 c sugar .
  • 1 (10 oz) package fresh spinach, sliced .
  • 2 cinnamon sticks .
  • 8 green onions, cut into 1-inch pieces .
  • 6 garlic cloves, crushed .
  • 5 c water .
  • 1 piece peeled fresh ginger, thinly sliced (1-inch length) .
  • 1 1/2 c rice wine or sake

Directions
  • Step #1 In a bowl, mix together the first 4 ingredients; set aside.
  • Step #2 Heat 1 tsp oil In a large-ish pot over medium-high heat; add in half the beef, browning on all sides.
  • Step #3 Remove from pan & repeat procedure with 1 tsp oil & remaining beef.
  • Step #4 Return beef to pan.
  • Step #5 Add in water mixture, garlic, onions, cinnamon, & ginger.
  • Step #6 Bring to a boil; lower heat, cover, & let simmer 2 hrs or until beef is tender.
  • Step #7 Discard ginger slices & cinnamon.
  • Step #8 Stir in spinach; cook for 3 mins or until wilted.
  • Step #9 Serve over noodles.
