Tamra's Lemon Artichoke Pesto Recipe

Ingredients

4 tbsps lemon juice .
8 medium garlic cloves .
1/2 tsp cayenne pepper .
1/2 c olive oil .
1 c walnuts .
1/2 c canola oil .
salt .
1/4 c cilantro, sliced .
1 (8 oz) package frozen artichokes, thawed & sliced .
1/2 c grated parmesan cheese

Directions

Step #1 Place the cilantro, canola oil, cayenne pepper, garlic, walnuts, lemon juice, olive oil & salt into food processor/blender bowl.
Step #2 Pulse until smooth.
Step #3 Add artichokes & cheese & pulse on short spurts until artichokes are still chunky.
Step #4 Serve over pasta & enjoy.
