Spicy Cajun Stew Recipe

Ingredients

2 (10 oz) cans ro-tel tomatoes & green chilies, undrained .
10 oz frozen sliced spinach, thawed, drained & squeezed dry .
16 oz smoked sausage or kielbasa, sliced into 1/4 inch slices .
14 1/2 oz chicken broth .
2/3 c uncooked instant rice

Directions

Step #1 In a large skillet saute sausage until lightly browned;drain.
Step #2 Add tomatoes & broth.
Step #3 Bring to boil.
Step #4 Add spinach.
Step #5 Return to a boil.
Step #6 Cook for 2 mins.
Step #7 Add rice.
Step #8 Cover up & remove this from heat.
Step #9 Let stand for 5 mins.
Step #10 Stir with a fork.
