Apple And Spice Cake, South African Recipe

Ingredients
  • 200 ml sliced walnuts or pecans .
  • 1 c sugar .
  • 1 tsp salt .
  • 400F g sweet apples, coarsely grated & weighed after grating .
  • 1 tsp ground nutmeg .
  • 3 tsps baking powder (not soda) .
  • 1 extra-large egg, beaten .
  • 1 tsp cinnamon .
  • 1/2 tsp ground allspice .
  • 375 ml cake flour .
  • 80 ml cooking oil

Directions
  • Step #1 Preheat oven to 180 deg C/350 deg F.
  • Step #2 Using a square cake tin of 16 - 20cm in diameter, line the bottom with cake paper, grease it well, & grease the paper too.
  • Step #3 Beat the egg in a LARGE mixing bowl.
  • Step #4 Add the grated apple, & toss well.
  • Step #5 Measure & mix well all dry ingredients up to the allspice.
  • Step #6 Mix the sugar, nuts & oil with the apple & egg in the large bowl.
  • Step #7 Add the dry ingredients & stir until just mixd.
  • Step #8 Spread the batter -- which is sticky -- in the prepared tin.
  • Step #9 Bake 45 - 60 mins or until a skewer comes out clean.
  • Step #10 OR fill 12 muffin c & bake about 25 - 30 mins.
