1 c marinade (I like a spicy peanut satay sauce) .
1 (14 oz) package extra firm tofu .
1/2 c flour (to dust)
Directions
Step #1 Place the tofu (still in its packaging) into the freezer for at least 24 hrs.
Step #2 Keeping it in there longer doesn't hurt it.
Step #3 Remove the tofu from the freezer & defrost by bringing a pot of water to a boil & placing the frozen block of tofu (still in its packaging) in the pot for 10 mins or until defrosted.
Step #4 Remove the tofu from the packaging (finally!) & cut the block laterally in half so you have two block-sized slabs that are half the width.
Step #5 Slice each slab lengthwise into three & place on a clean dish towel or paper towels.
Step #6 Cover up the six pieces with another dish towel & place a cutting board or baking tray or other flat object on top.
Step #7 Place heavy cans or books onto the board & let sit for 15-30 mins.
Step #8 Cut the tofu lengths into cubes & place this into marinade for a minimum of 30 mins.
Step #9 Remove from the marinade & dust the tofu cubes with flour.
Step #10 Heat the oil in a frying pan over med-heat/flame.
Step #11 Shallow fry the cubes until all sides are golden brown & crispy.
Step #12 Serve hot with rice or couscous & a puddle of the marinade as a dipping sauce.
