Ingredients
  • salt .
  • 2 eggs .
  • 1/2-3/4 c flour .
  • 2 tbsps butter .
  • 1 1/2 c cornmeal .
  • 4-6 tbsps mayonnaise (JFG brand) .
  • 1 tbsp pan drippings .
  • 1 c buttermilk .
  • sugar

Directions
  • Step #1 Mix all ingredients together.
  • Step #2 Put the tbs of grease in cast iron skillet to make the cornbread crusty, then pour in all ingredients.
  • Step #3 (*Make sure the batter is not thin & runny, if so, add equal consistencies of flour & cornmeal to thicken*).
  • Step #4 I sometimes add a little bit of salt, & a tbs of sugar, but this is optional.
  • Step #5 Bake on 400-425 degrees for 25-30 mins.
