Joan's Artichoke And Pasta Salad With Tomato Sauce Recipe

Directions

Step #1 Cook pasta according to box directions, to al dente, & drain.
Step #2 Transfer to a serving bowl & toss with the olive oil.
Step #3 Drain marinade from the artichokes into a 10" skillet & heat.
Step #4 Set the artichokes aside & cut into halves.
Step #5 Add the garlic & onions to the marinade liquid in the skillet & let simmer until the onions are translucent.
Step #6 Add the tomatoes, bay leaf, herbs (except parsley), & salt.
Step #7 Cover up & let simmer 10 mins.
Step #8 Uncover & cook another 10 mins.
Step #9 Add the artichokes to the sauce mixture & heat for a few mins.
Step #10 Remove the bay leaf & stir in the the parsley.
Step #11 Remove the skillet from the heat & cool the sauce to about room temp.
Step #12 Once cooled, pour over the pasta & toss until well mixed.
Step #13 Sprinkle top Parmesan cheese on top or serve along side the pasta.
