Joan's Easy Sweet And Sour Chicken Recipe

Ingredients
  • 1 c low sodium soy sauce .
  • 3/4 tsp black pepper .
  • Sauce .
  • 3 garlic cloves, minced .
  • 3-4 lbs chicken parts, cut up .
  • 1 1/2 tsps ground ginger .
  • 1/2 c cider vinegar .
  • 4 tbsps cornstarch .
  • 1 (24 oz) can crushed pineapple, reserving 2 tsp. juice .
  • 1/2 c sugar

Directions
  • Step #1 In a large saucepan, mix all sauce ingredients.
  • Step #2 Cook over med-heat/flame, stirring constantly until sauce thickens & bubbles.
  • Step #3 Place chicken parts in a baking dish, skin side down (if you are leaving the skin on) or meat side down.
  • Step #4 Pour sauce over the chicken in the baking dish & bake in a 400F degree oven for 1 hr, basting several times if needed.
  • Step #5 After a half an hr, turn the pieces over & let the skin get crisp.
  • Step #6 If it is in too much liquid, remove chicken to a broiler rack & broil to finish.
  • Step #7 Serve with the sauce over the chicken & with rice.
