Italian Roast Pork Loin Recipe

Ingredients
  • 2 tbsps butter .
  • 1/4 c olive oil .
  • 2 tbsps minced garlic .
  • 1 small onion, sliced .
  • 1 tsp salt .
  • 3 lbs pork loin roast .
  • 2 tbsps rosemary .
  • 1 tsp pepper

Directions
  • Step #1 Oven @ 350 degrees.
  • Step #2 Trim fat from pork.
  • Step #3 Combine rosemary, pepper, salt, garlic, & olive oil.
  • Step #4 Melt butter in roasting dish & then place onions over top of the butter.
  • Step #5 Rub rosemary mixture all over pork loin.
  • Step #6 Sear on all sides in a hot skillet.
  • Step #7 Place pork on top of onions in roasting pan & then cover with foil wrap.
  • Step #8 Bake for an hr or until meat thermometer reads 160.
  • Step #9 To make a real tasty onion gravy for the meat, mix 1 tbsp of flour in 1 c of cold water.
  • Step #10 Pour pan drippings with onions into a small saucepot & bring to a gentle boil.
  • Step #11 Add water & cornstarch mixture.
  • Step #12 Whisk & boil until thickened.
  • Step #13 Serve with pork loin roast.
