- 6 boneless skinless chicken breast halves .
- 3 tbsps cornstarch .
- 1/4 c hot water .
- 1/4 tsp garlic powder .
- 1 (20 oz) can pineapple chunks .
- 1 tbsp soy sauce .
- 2 tsps chicken bouillon granules .
- 1 medium green pepper, cut into strips .
- 1/3 c packed brown sugar .
- 1 medium onion, cut into wedges .
- hot cooked rice .
- 1 lb baby carrots .
- 1/2 tsp pepper .
- 1/2 tsp ground ginger
Directions
- Step #1 In slow cooker (aka crockpot), green pepper, layer carrots, & onion.
- Step #2 Top with chicken.
- Step #3 Drain pineapple, reserving juice.
- Step #4 Place pineapple over chicken.
- Step #5 Add brown sugar, bouillon, soy sauce, ginger, pepper, salt, & garlic powder to pineapple juice; pour over pineapple.
- Step #6 Cover up & cook on LOW for 8 hrs.
- Step #7 Combine cornstarch & water until smooth.
- Step #8 Gradually stir in theto cooking juices.
- Step #9 Cook 30 mins longer or until sauce is thickened.
- Step #10 Serve over rice.
