Ingredients
6 oz chorizo sausage .
1/2 tsp ground cumin .
1 (8 oz) can tomato sauce .
vegetable oil .
1 lb ground beef .
1 c monterey jack cheese .
12 flour tortillas (8 in.) .
1 garlic clove, minced .
1/2 c finely sliced white onions
Directions
Step #1 Remove casing from chorizo.
Step #2 Heat large skillet over high heat until hot.
Step #3 Reduce heat to medium.
Step #4 Brown chorizo 6 to 8 min.
Step #5 Add beef.
Step #6 brown 6 to 8 min Add onion, garlic, & cumin.
Step #7 Cook 4 min or until onion is soft.
Step #8 Discard fat.
Step #9 Stir in tomato sauce.
Step #10 Reduce heat to low, cover & let simmer 15 min.
Step #11 Uncover, increase heat to med.
Step #12 Cook until liquid has evaporated.
Step #13 Warm tortillas.
Step #14 Place 1/4 c meat mixture on bottom half of 1 tortilla.
Step #15 Sprinkle top with 1 tbs.
Step #16 cheese.
Step #17 Roll up folding the sides inches Repeat with remaining tortillas.
Step #18 Heat 1 inches oil in skillet over medium high heat.
Step #19 Fry 2 or 3 chimichangas at a time for 2 or 3 min until golden brown on all sides.
