Penne With Pork Chops Recipe

Ingredients
  • 1/4 tsp ground black pepper .
  • 1 c Italian parsley, sliced .
  • 1 tsp dried oregano .
  • 8 thin sliced pork chops .
  • 1 (8 oz) jar mushrooms, drained .
  • 1 lb cooked penne pasta .
  • 4 garlic cloves, minced .
  • 11 1/2 oz tomato juice .
  • 1 tsp dried thyme .
  • 12 oz water .
  • 3 tbsps olive oil .
  • 3/4 c dry red wine .
  • 2 tsps salt .
  • 12 oz tomato paste .
  • 1 small onion, sliced finely .
  • 2 tsps dried basil .
  • 28 oz crushed tomatoes

Directions
  • Step #1 Saute the onion in the olive oil In a large-ish pot until translucent.
  • Step #2 Add the garlic & continue cooking until the garlic is slightly brown.
  • Step #3 While the onion is cooking mix the tomato paste & water together.
  • Step #4 Place the pork chops in the pot.
  • Step #5 Add the tomato paste mixture, crushed tomatoes, & the tomato juice to the pot then stir.
  • Step #6 Add the dry seasonings, wine, & mushrooms.
  • Step #7 Simmer for 1 hr.
  • Step #8 10 mins before the sauce is finished add the parsley.
  • Step #9 Remove pork chops & keep warm while you mix pasta & sauce.
  • Step #10 Serve with a salad.
