Step #1 In a large bowl or plastic container with a lid, mix the cocoa, instant non-fat dry milk, cornstarch, sugar, & salt.
Step #2 Store in an airtight container in the refrigerator for up to 1 month.
Step #3 Place dry pudding mix (aproxamatly 2 1/2 c) into a medium saucepan.
Step #4 Add milk & whisk to mix.
Step #5 Over medium heat, bring mixture to a boil, continuously whisking carefully.
Step #6 Reduce heat to low & cook for 4 mins while continuing to whisk.
Step #7 Remove from heat & stir in the vanilla.
Step #8 Pour the mixture through a sieve & into individual dishes or a 3-quart serving dish.
Step #9 Cover up the surface of the pudding with plastic wrap.
Step #10 Place in the refrigerator to chill completely before serving, approximately 4 hrs.
