Potato Pancakes With Goat Cheese Recipe

Ingredients
  • 1 1/2 tbsps olive oil .
  • 4 tsps chives, finely sliced .
  • 1/4 c parmesan cheese (optional) .
  • 1/2 tsp salt .
  • 5 russet potatoes, peeled & grated .
  • 1/4 tsp pepper .
  • 4 oz soft fresh goat cheese, crumbled

Directions
  • Step #1 Place the grated potatoes in a dry kitchen towel to remove as much moisture as possible.
  • Step #2 Transfer potatoes to large bowl & toss in salt & pepper.
  • Step #3 If desired, add parmesan cheese.
  • Step #4 Heat 1 tbsp of oil In a large-ish skillet over med-heat/flame.
  • Step #5 Mound 1/3 c of potatoes in skillet & flatten to form about a 3 inch round.
  • Step #6 Repeat 3 times, forming 4 pancakes.
  • Step #7 Top each cake with 1/4 of goat cheese & sprinkle with 1 tsp of chives.
  • Step #8 Cover up each with another 1/3 c potatoes; press to adhere, enclosing cheese completely & flattening slightly.
  • Step #9 Cook until bottoms are golden, about 6 mins.
  • Step #10 Add 1/2 tbsp oil to skillet.
  • Step #11 Turn pancakes over; cook this until golden, about 6 mins.
