Creamy Chickpea & Rosemary Soup Recipe

Ingredients
  • 3 (15-19 oz) cans chickpeas, rinsed & drained .
  • 5 garlic cloves, finely sliced .
  • 2 tbsps fresh lemon juice .
  • 4 c chicken broth (or vegetable) .
  • 1/2 tsp crushed red pepper flakes .
  • 3 tbsps olive oil .
  • 1 tbsp fresh rosemary leaves, minced .
  • sea salt

Directions
  • Step #1 In a large saucepan, heat the oil over med-heat/flame & add garlic, rosemary & red pepper flakes.
  • Step #2 Cook, stirring constantly, until the garlic starts to brown, about 1 min.
  • Step #3 Add chickpeas & cook 2 mins, stirring constantly.
  • Step #4 Add chicken broth & bring to a boil.
  • Step #5 Reduce heat & let simmer 30 mins; let cool slightly.
  • Step #6 Transfer soup to a mixer; cover loosely, & puree until just smooth.
  • Step #7 Return to the saucepan & stir in the lemon juice & sea salt to taste.
  • Step #8 Serve, garnished with a frsh rosemary sprig, or an extra drizzling of oilive oil.
