Diabetic Blueberry Syrup Recipe

Ingredients

12 oz unsweetened frozen blueberries, thawed .
1/2 c water .
10 tsps artificial sweetener .
1 tbsp lemon juice .
4 tsps cornstarch .
1 tbsp margarine .
1/4 tsp nutmeg

Directions

Step #1 In saucepan, mix blueberries with 1/8 c of water, margarine, nutmeg & lemon juice.
Step #2 Bring to a boil.
Step #3 Reduce heat & let simmer til berries are soft.
Step #4 Dissolve cornstarch in remaining water.
Step #5 Add to blueberries & continue to cook, stirring constantly, until syrup thickens.
Step #6 Remove from head & cool.
Step #7 Sir in sweetener.
Step #8 Serve warm or chilled.
