Salmon Fillets Ragout Recipe

Ingredients

4 salmon fillets .
1/3 c clam juice .
1 white onion, sliced into rings .
1/4 c heavy cream .
3 tbsps butter .
1/4 c fresh lemon juice, squeezed .
3 c assorted mushrooms, sliced .
1 garlic clove, minced .
1/2 tsp tarragon, crumbled .
1/3 c white wine .
2 tbsps olive oil

Directions

Step #1 Melt butter in skillet.
Step #2 Add garlic & onion & sautee about 3 mins.
Step #3 Reduce heat to medium.
Step #4 Add mushrooms & sautee until mushrooms are tender about 8 mins.
Step #5 Add clam juice & wine & bring to a boil.
Step #6 Continue to cook this until liquid turns syrupy about 15 mins.
Step #7 Add cream & boil for 2 mins.
Step #8 Stir in tarragon, salt & pepper.
Step #9 Remove from stove.
Step #10 Meanwhile, place salmon on a greased baking dish in a single layer.
Step #11 Brush fillets with olive oil & lemon juice.
Step #12 Broil salmon 4 inches from heat source, for about 8 mins.
Step #13 Turn salmon over & broil for another 8 mins.
Step #14 Plate salmon.
Step #15 Top with mushroom ragout.
Step #16 Serve.
