Paczki - Little Pillow Polish Dough
Ingredients
1 large potato, enough to make 1 c mashed .
1/4 c butter, soft .
3 tbsps sugar .
1 tsp salt .
4 c flour .
oil, to fry the bread in .
garlic salt, to sprinkle it over the tops of breads .
1 c barely warm milk .
2 eggs .
3-4 c water, to cover the potato .
1 1/4 oz yeast
Directions
Step #1 Scrub the potato clean, then boil it in the water.
Step #2 Remove the potato from the water to cool.
Step #3 Reserve the water.
Step #4 Peel the potato & discard the skin (or use for something else).
Step #5 In a small bowl, milk, mix the yeast, & sugar.
Step #6 Set it aside until it is bubbly.
Step #7 If the yeast mixture does not get bubbly, your yeast is dead.
Step #8 Get some fresh yeast, make sure your milk is not too warm, & try again.
Step #9 Now, mash the potato & measure out 1 c.
Step #10 Use the remaining mashed potato elsewhere.
Step #11 Combine 4 c flour with the softened butter, then add the salt & 1 c mashed potato.
Step #12 Taste it & adjust the salt as needed.
Step #13 Add the eggs & bubbly yeast mixture.
Step #14 Using only as much potato water as needed, create a dough.
Step #15 Set the dough aside in a warm place, covered with a damp towel for maybe an hr & ½ , to rise until doubled in size.
Step #16 On a floured surface, roll out the dough until it is ½ in thick.
Step #17 Do not work the dough any more than necessary.
Step #18 Cut out 3 in circles.
Step #19 Set the circles aside to rise again.
Step #20 Heat the oil until very, very hot.
Step #21 Take the dough circles & stretch them out.
Step #22 Three inch circles should make about six inch breads.
Step #23 Fry the breads until they are golden, turning them to get both sides done.
Step #24 Dust the tops of the breads with garlic salt.
