Diabetic Pineapple Fluff Recipe

Ingredients
  • 1 1/2 tsps unflavored gelatin (1 envelope) .
  • 1 3/4 c unsweetened pineapple juice .
  • 1 baked pie crust (or crumb crust) .
  • 1 c unsweetened crushed canned pineapple, drained .
  • 1 c whipping cream .
  • 4 tsps artificial sweetener .
  • 1/4 c cold water

Directions
  • Step #1 In small saucepan soften gelatin in cold water.
  • Step #2 Stir over low heat/flame til it dissolves completely.
  • Step #3 Add pineapple juice.
  • Step #4 Cover up & refridgerate til mixture begins to set.
  • Step #5 Whip until light & fluffy.
  • Step #6 Fold in crushed pineapple.
  • Step #7 Whip cream til stiff.
  • Step #8 Beat in artificial sweetener.
  • Step #9 Fold whipped cream into pineapple mixture.
  • Step #10 Pour into crust, & refridgerate til firm.
