Shrimp With Banana, Guava Salsa Over Coconut Rice Recipe

Ingredients
  • MARINADE .
  • RICE .
  • 1 tsp salt .
  • 1 tbsp olive oil .
  • 1/2 c orange juice .
  • 2 tbsps brown sugar .
  • SALSA .
  • 1/2 c orange juice .
  • 1 c papayas, sliced .
  • 3 bananas, sliced (small red or fingerling) .
  • 1/2 tsp cinnamon .
  • 1 c white rice .
  • 1 tbsp vegetable oil .
  • 3 tbsps lime juice .
  • 1 tbsp curry powder .
  • 1 1/4 lbs shrimp .
  • 1/2 c cilantro, sliced .
  • 1/2 c guava juice .
  • 2 c coconut milk .
  • 2 tbsps green onions, sliced .
  • 1 tbsp lime juice

Directions
  • Step #1 Combine orange juice, cilantro, lime juice & shrimp (remove shells & tail).
  • Step #2 Cover up & marinate in refrigerator 30 mins to 4 hrs.
  • Step #3 Combine salsa ingredients EXCEPT bananas & chill in the fridge.
  • Step #4 Bring coconut milk to a boil, add rice & salt.
  • Step #5 Cover up & cook over low heat/flame until rice is done.
  • Step #6 In a large saute pan, add 1 tbsp olive oil & drained shrimp.
  • Step #7 Discard marinade.
  • Step #8 Cook shrimp until opaque & remove this from heat.
  • Step #9 TO SERVE:.
  • Step #10 Add sliced bananas to salsa.
  • Step #11 Place a mound of rice on plate, then shrimp, top this with salsa.
  • Step #12 Can sprinkle on a little paprika & garnish with cilantro.
