Chicken Cilantro Recipe

Ingredients
  • 1/3 c water
  • 1 bunch fresh cilantro, sliced
  • 1 (15.5 oz) can hominy, drained
  • 1/2 head garlic
  • salt to taste
  • 1 tbsp vegetable oil
  • 1 red onion, coarsely sliced
  • 1/4 tsp freshly ground black pepper
  • 4 skinless, boneless chicken breast halves - sliced
  • 1 cube chicken bouillon
  • 1 c uncooked long grain white rice

Directions
  • Step #1 Heat the oil in a large pot over medium-high heat, & saute the onion until tender.
  • Step #2 Place the chicken in the pot, & cook this until lightly browned.
  • Step #3 Puree the cilantro, garlic, & 1/3 c water in a mixer or food processor/blender.
  • Step #4 Mix into the pot with the chicken & onions.
  • Step #5 Cook & stir about 5 mins, until mixed & heated through.
  • Step #6 Pour enough water into the pot to cover all ingredients.
  • Step #7 Mix the hominy, rice, & bouillon into the pot.
  • Step #8 Bring to a boil, cover, & let simmer 20 mins, reduce heat, or until rice is tender.
  • Step #9 Increase the amount of water as needed to attain desired consistency.
  • Step #10 Spice up with salt & pepper.
