Tomato, Pasta And Spinach Soup Recipe

Ingredients
  • 2 tsps oil .
  • grated parmesan cheese (optional) .
  • 1 tbsp minced garlic cloves .
  • 6 c water .
  • 4 chicken bouillon cubes .
  • 1 c shell pasta .
  • 1 (15 oz) can white kidney beans .
  • 1 (10 oz) package frozen sliced spinach .
  • 4 c crushed tomatoes (fresh or 28 oz. can) .
  • 1/4 tsp dried sage

Directions
  • Step #1 In a 3-4 quart pot, heat garlic in oil until aromatic.
  • Step #2 Add water, tomatoes, chicken broth cubes, & sage & bring to a boil.
  • Step #3 Stir in pasta & cook, stirring every once in awhile, 5 mins.
  • Step #4 Add spinach & cook, breaking up spinach as it thaws, 5 to 7 mins longer until pasta is tender.
  • Step #5 Stir in rinsed & drained beans & heat 1 min longer.
  • Step #6 Sprinkle top with parmesan cheese if desired.
