Mexican Chicken Recipe

Ingredients
  • 1 tsp cayenne pepper .
  • salt & pepper .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 1/8 tsp red pepper flakes .
  • 1 tsp chili powder .
  • 1-2 tsp chili powder .
  • 2 tbsps tomato paste .
  • 1/2 tsp garlic powder .
  • 1/8 tsp paprika .
  • 1 1/2 tsps ground coriander .
  • 1/2 medium onion, finely sliced .
  • 1 tsp ground coriander .
  • 4 boneless skinless chicken breasts .
  • 1 c frozen corn .
  • 2 tbsps oil

Directions
  • Step #1 Heat the oil In a large-ish frying pan.
  • Step #2 Rub chicken with salt & pepper & place this in the pan.
  • Step #3 Sprinkle top with paprika & cook over med-heat/flame until lightly browned.
  • Step #4 Remove from the pan & set aside.
  • Step #5 Add the onion to the pan & cook for 3-4 mins until soft, then stir in the the chilli powder & coriander & cook for a few seconds.
  • Step #6 Add the tomatoes with their juice & the tomato puree.
  • Step #7 Return the chicken to the pan along with the remaining spices (including extra salt & pepper) & let simmer carefully for 20 mins until the chicken is tender & thoroughly cooked.
  • Step #8 Add the corn & cook a further 3-5 mins.
  • Step #9 Serve with rice & a mixed pepper salad.
