Ingredients
  • 1/2 c chow mein noodles .
  • 3 tbsps creamy no-sugar-added peanut butter .
  • 1/4 c sliced dry roasted salted peanuts or sunflower seeds .
  • 1 1/2 tsps soy sauce .
  • 1 earthbound farm organic carrot, shredded .
  • 2 tsps grated fresh gingerroot .
  • Dressing .
  • 1/4 tsp Asian chili sauce .
  • 1 grated lime, zest of .
  • 1 tbsp fresh lime juice .
  • 2 tbsps unseasoned rice vinegar .
  • 1/2 small red bell pepper, cut into thin slivers .
  • 1/4 c toasted sesame oil .
  • 2 tbsps brown sugar .
  • 5 oz earthbound farm organic baby spinach .
  • Salad

Directions
  • Step #1 Place the dressing ingredients in a mixer & puree until smooth.
  • Step #2 In a large bowl toss together the baby spinach & shredded carrots.
  • Step #3 Add half of the peanut dressing & toss to coat the greens; add more dressing sparingly as needed.
  • Step #4 Divide between chilled salad plates & garnish each serving with a sprinkling of peanuts, chow mein noodles, & slivered pepper.
