Step #1 Use a food processor/blender to finely chop the dried banana; mix the banana, almonds & coconut in a bowl.
Step #2 Use 2 husks to make strips for tying the tamales.
Step #3 Take about 1 c of the pineapple & puree it with the fruit juice & brown sugar.
Step #4 Cream the shortening & sugar.
Step #5 In a separate bowl, mix together the masa & salt.
Step #6 Alternately add the masa & juice to the creamed shortening to make a firm dough; beat in the baking powder last.
Step #7 Assembly: Spread 1 tbsp filling in the center of a husk; sprinkle 1 to 2 tsps of the banana/almond mixture over the dough & press a pineapple chunk into the dough.
Step #8 Spread another tbsp of the dough over the the filling & fold & tie the tamale.
Step #9 Steam for about 1 hr 15 mins.
Step #10 To Serve: Open the tamale & top this with sauce, whipped cream, & lime zest.
