Roasted Halibut With Fresh Herb Sauce Recipe

Ingredients
  • 1 tbsp marjoram, finely sliced .
  • 6 (6 oz) halibut, skinless or cod fish fillets .
  • 2 tsps red wine vinegar .
  • 1 c coarse fresh breadcrumbs .
  • 2 tsps garlic, minced .
  • 1/4 c arugula leaves, finely sliced .
  • fresh ground pepper .
  • 1/4 c flat leaf parsley, finely sliced .
  • kosher salt .
  • 1 tbsp dry white wine .
  • 1/2 c extra-virgin olive oil, plus .
  • 1 tbsp oregano, finely sliced .
  • 1 tbsp extra-virgin olive oil

Directions
  • Step #1 Preheat the oven to 400°.
  • Step #2 In a medium bowl, toss the bread crumbs with 1 tbsp of the olive oil, 1 tsp of the minced garlic & the wine.
  • Step #3 Spread the crumbs on a pie plate & toast for 8 mins, or until lightly browned.
  • Step #4 Meanwhile, mix the 1/2 c of oil with the parsley, oregano, in a bowl, marjoram, arugula, vinegar & the remaining 1 tsp of garlic.
  • Step #5 Spice up the herb sauce with salt & pepper.
  • Step #6 Lightly oil a large baking dish.
  • Step #7 Arrange the halibut fillets in the dish, season this with salt & pepper & roast for 8 mins.
  • Step #8 Sprinkle top the fish with the toasted bread crumbs & bake for about 8 mins longer, or until the fish is cooked through.
  • Step #9 Transfer the fish to plates, drizzle with the herb sauce & serve.
