White Chocolate And Fig Cake Recipe

Ingredients
  • 1 tsp cinnamon .
  • 1 tsp vanilla essence .
  • icing sugar .
  • 125 g butter .
  • 1/4 c white chocolate pieces .
  • 4-6 dried figs, sliced .
  • 2 eggs .
  • 2 tbsps golden syrup .
  • 1/2 c self-raising flour .
  • 1/2 c milk .
  • 1 c brown sugar .
  • 2 tbsps almond meal .
  • 2 tbsps Cointreau liqueur .
  • 1 c plain flour

Directions
  • Step #1 Place figs in a small bowl with liqueur.
  • Step #2 Allow to soak for 3 - 4 hrs or alternatively microwave on HIGH for 3 mins.
  • Step #3 Cream butter & sugar until light & fluffy.
  • Step #4 Beat in vanilla.
  • Step #5 Add eggs one at a time beating after each addition.
  • Step #6 Blend in syrup.
  • Step #7 Sift together flours & cinnamon.
  • Step #8 Fold into creamed mixture, alternating with milk.
  • Step #9 Lightly mix in figs, almond meal & chocolate.
  • Step #10 Pour mixture into greased 20cm bundt cake mould or ring tin.
  • Step #11 Bake in moderate oven 180 degrees C for 40 to 45 mins.
  • Step #12 Cool in tin for 5 mins.
  • Step #13 Dust with icing sugar when cool.
