Easy Lemon Tart Recipe

Ingredients
  • 4 lemons .
  • 2 (397 g) cans condensed milk .
  • 80 g melted butter .
  • raspberries, to decorate .
  • 180 g crunchy oat biscuits .
  • 300F ml double cream

Directions
  • Step #1 Crush biscuits to coarse crumbs either in processor or in a bag with rolling pin; mix with melted butter.
  • Step #2 Press into a 20cm loose bottomed tin; chill until firm, about 10 min.
  • Step #3 Pour condensed milk & cream into a big bowl.
  • Step #4 Finely grate the zest from 2 of the lemons into the bowl.
  • Step #5 Squeeze the juice from all the lemons & add to the mixture.
  • Step #6 Stir until all is well mixd & mixture is glossy, thick & smooth.
  • Step #7 Spoon lemon mixture over biscuit base & chill for 2 hrs or until firm.
  • Step #8 Unclip tin & arrange raspberries on top.
  • Step #9 Dust with icing sugar.
