Butterscotch Pancakes Recipe

Ingredients
  • 2 tsps baking powder .
  • 1 1/4 c milk .
  • Butterscotch Sauce .
  • 1 c self-raising flour .
  • 60 g butter .
  • 1/3 c thickened cream .
  • 15 g butter, melted .
  • 1/2 c brown sugar .
  • 1/2 c brown sugar .
  • 1 egg .
  • Pancakes

Directions
  • Step #1 To prepare butterscotch sauce: Melt butter in small saucepan until turns golden brown.
  • Step #2 Stir in sugar.
  • Step #3 Cook for 2 mins stirring constantly.
  • Step #4 Reduce heat & mix in cream.
  • Step #5 Continue until sauce thickens slightly - do not boil.
  • Step #6 Set aside.
  • Step #7 To prepare pancakes: Sift flour & baking powder together into bowl.
  • Step #8 Stir in sugar.
  • Step #9 Make well in centre.
  • Step #10 In a separate bowl mix milk, egg, butter.
  • Step #11 Gradually whisk into dry ingredients until smooth - may be done in a mixer.
  • Step #12 Allow to stand for 30 mins.
  • Step #13 Heat small frying pan, add a little butter.
  • Step #14 Pour batter into pan & cook pancakes on both sides until golden.
  • Step #15 Keep pancakes warm in very low oven covered in foil wrap.
  • Step #16 To serve stack 3 pancakes on a plate & pour butterscotch sauce over the top.
