Tater Tot Chicken Pie Recipe

Ingredients
  • 2 small garlic cloves, pressed .
  • 2 c sliced cooked chicken .
  • 1 tbsp butter or olive oil .
  • black pepper .
  • 1/4 c milk .
  • 1 (10 oz) package frozen mixed vegetables .
  • 1 (10 3/4 oz) can cream of chicken soup .
  • 1/2 c sliced onions .
  • dried thyme .
  • 1 (2 lb) bag frozen tater tots

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 In large skillet, cook onion & pressed garlic in butter or olive oil over medium high heat until onion is tender.
  • Step #3 Add cooked chicken, frozen veggies, milk, undiluted soup, thyme & pepper.
  • Step #4 Stir ingredients together & cook over med-heat/flame until hot & bubbly.
  • Step #5 Stirring every once in awhile.
  • Step #6 Cover up & cook an extra 5 mins; stirring frequently.
  • Step #7 Spoon chicken mixture into ungreased 2-quart casserole dish.
  • Step #8 Arrange frozen tater tots on top.
  • Step #9 Bake 40 mins or until bubbly & tater tots are slightly browned.
  • Step #10 Note: This recipe easily doubles & you can make two.
  • Step #11 I freeze the extra one with the tater tots on top & then remove & thaw in fridge.
  • Step #12 Bake as directed above.
  • Step #13 Also, I sometimes add an extra can of soup & an extra 1/4 c of milk for a thinner consistency.
  • Step #14 This would be a personal preference.
  • Step #15 Also, I add approximately 1/2 tsp of dried thyme & 1/2 tsp of black pepper for one casserole - adaptable to your taste.
