Shrimp Provencal Over Rice Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 3 medium tomatoes, sliced .
  • 1 lb mushrooms, sliced .
  • 1/8 tsp pepper .
  • 1 1/2 lbs large shrimp, shelled & deveined .
  • 3 c hot cooked rice .
  • 2 tbsps finely sliced fresh parsley .
  • 3 tbsps olive oil .
  • 2 tbsps lemon juice .
  • 3/4 tsp salt

Directions
  • Step #1 In 12-inch skillet over med-heat/flame, cook shrimp stirring frequently, in 2 tbsps hot oil, until shrimp turn pink, about 3 mins.
  • Step #2 Remove from pan & set aside.
  • Step #3 In same skillet, add mushrooms & garlic & cook this until mushrooms are tender, about 5 mins, in remaining tbsp of hot oil, stirring every once in awhile.
  • Step #4 Add tomatoes, lemon juice, salt, & pepper & cook 3 mins more.
  • Step #5 Return shrimp to skillet & heat through.
  • Step #6 Sprinkle top with parsley & serve over rice.
