Step #1 In 12-inch skillet over med-heat/flame, cook shrimp stirring frequently, in 2 tbsps hot oil, until shrimp turn pink, about 3 mins.
Step #2 Remove from pan & set aside.
Step #3 In same skillet, add mushrooms & garlic & cook this until mushrooms are tender, about 5 mins, in remaining tbsp of hot oil, stirring every once in awhile.
Step #4 Add tomatoes, lemon juice, salt, & pepper & cook 3 mins more.
Step #5 Return shrimp to skillet & heat through.
Step #6 Sprinkle top with parsley & serve over rice.
