Main Course (hamburger) Soup Recipe

Ingredients
  • 2 c beef broth .
  • 1 bay leaf .
  • 4 large carrots, peeled & sliced .
  • 1 medium onion, sliced .
  • 2 medium potatoes, peeled & sliced .
  • 1 1/2 lbs lean ground beef .
  • 1 c peas (fresh or frozen) .
  • 1 tsp salt .
  • 4 stalks celery, sliced .
  • 2 tsps dried parsley flakes .
  • 1 (10 oz) can tomato soup, diluted with one can of water .
  • 3/4 tsp pepper

Directions
  • Step #1 Fry ground beef & onion with salt & pepper until browned.
  • Step #2 Add beef broth, tomato soup & water.
  • Step #3 Add prepared veggies, parsley flakes & bay leaf & let simmer until veggies are tender (15 to 20 mins).
  • Step #4 If you have any leftover tomatoes (fresh, frozen or canned) or tomato sauce add that while cooking the veggies.
  • Step #5 Remove bay leaf & add a splash of cream before serving.
  • Step #6 This soup is quite thick.
  • Step #7 For a thinner consistency add more beef broth or another tin of tomato soup.
