Asian Coleslaw With Miso-ginger Dressing Recipe

Ingredients
  • 1 tbsp fresh lemon juice .
  • 3 large scallions, white & light green parts only, julienned .
  • 1 pinch sugar .
  • 3/4 c grapeseed oil or vegetable oil .
  • 4 radishes, shredded .
  • 4 medium carrots, shredded .
  • 1 tbsp mayonnaise .
  • 1 tsp fresh ginger, finely grated .
  • 1/2 small green cabbage, shredded (4 c) .
  • 1/2 small red cabbage, shredded (4 c) .
  • 3 tbsps white miso (shiro) .
  • 1/4 c rice vinegar, unseasoned .
  • salt & freshly ground black pepper

Directions
  • Step #1 In a food processor/blender, mayonnaise, lemon juice, miso, mix the rice vinegar, ginger & sugar & process until completely smooth.
  • Step #2 With the machine on, add the grapeseed oil in a slow & steady stream.
  • Step #3 Spice up the dressing with salt & pepper.
  • Step #4 Pour 1/2 c of the dressing into a large bowl & put in the fridge the rest for another use.
  • Step #5 Add the green & red cabbage, carrots, radishes & scallions to the bowl & toss to coat thoroughly with the dressing.
  • Step #6 Serve slightly chilled or at about room temp.
