Thai Tuna Burgers With Ginger-lemon Mayonnaise Recipe

Ingredients
  • fresh ground pepper .
  • 1 c mayonnaise .
  • Ginger-Lemon Mayonnaise .
  • 1 tbsp black sesame seeds or toasted sesame seeds .
  • 2 tsps fresh lemon juice .
  • 1 garlic clove, smashed .
  • 2 tbsps scallion tops, finely sliced .
  • 2 tsps fresh ginger, finely grated .
  • 2 tbsps cilantro, finely sliced .
  • 1 Thai chile or serrano chili, seeded & minced .
  • 1 tbsp basil, finely sliced .
  • 2 tbsps asian fish sauce .
  • 1 1/2 lbs tuna (sushi-quality) .
  • kosher salt .
  • 2 tbsps soy sauce .
  • 2 tbsps dry roasted peanuts, finely sliced .
  • 1 tbsp sugar .
  • 4 hamburger buns .
  • fresh ground pepper .
  • 1 1/2 tsps sesame oil .
  • 2 tbsps cilantro, finely sliced .
  • 2 tsps fresh ginger, finely grated .
  • 1 1/2 tbsps vegetable oil .
  • 3 tbsps rice vinegar .
  • 1 finely grated lemon, zest of .
  • 2 kirby cucumbers, thinly sliced .
  • 1 tsp sugar .
  • 1/4 medium red onion, thinly sliced

Directions
  • Step #1 In a medium bowl, vinegar, toss the cucumbers, onion, 1 tbsp of the sugar & 1 tsp of salt.
  • Step #2 Spice up with pepper & let this stand for 1 hr at about room temp.
  • Step #3 In a mortar or medium bowl, using the back of a spoon, mash the ginger with the garlic, chile & remaining 1 tsp of sugar to a paste.
  • Step #4 Stir in the fish sauce, cilantro & basil.
  • Step #5 On a clean cutting board, thinly slice the tuna.
  • Step #6 Stack the slices & cut into thin matchsticks.
  • Step #7 Cut the matchsticks into rough cubes, then chop until the pieces are roughly 1/8 inch.
  • Step #8 Add the tuna to the ginger paste & stir until evenly mixd.
  • Step #9 Using lightly moistened hands, shape the tuna mixture into 4 patties about 1 inch thick.
  • Step #10 Set them on a large plate lined with plastic wrap.
  • Step #11 Refrigerate the tuna burgers for 20 mins.
  • Step #12 Light a grill.
  • Step #13 In a small bowl, mix the vegetable oil with the sesame oil.
  • Step #14 Lightly brush the burgers & the cut sides of the buns with oil.
  • Step #15 When the fire is medium hot, brush the grate with oil.
  • Step #16 Grill the burgers for 6 mins, turning once, for medium rare.
  • Step #17 Move the burgers away from the heat & grill the cut sides of the buns until toasted, 1 min.
  • Step #18 Combine all the Ginger-Lemon Mayonnaise ingredients in a small bowl.
  • Step #19 Drain the cucumber salad.
  • Step #20 Spread the Ginger-Lemon Mayonnaise on the cut sides of the buns & set the tuna burgers on the bottoms.
  • Step #21 Top with the cucumber salad & peanuts.
  • Step #22 Cover up the burgers with the buns & serve.
