Hawaiian Sausage Casserole Recipe

Ingredients
  • 2 tbsps cornstarch .
  • 1/4 tsp salt .
  • 1 (20 oz) can pineapple chunks in juice .
  • 3/4 lb smoked sausage, sliced .
  • 1 (16 oz) can sweet potatoes, drained & cut into 1/2 inch slices .
  • 1 tbsp butter .
  • 2 c rice, cooked .
  • 3 tbsps brown sugar

Directions
  • Step #1 1.
  • Step #2 Drain pineapple, saving juice.
  • Step #3 2.
  • Step #4 Add enough water to juice to measure 1 & 1/4 c.
  • Step #5 Set aside.
  • Step #6 3.
  • Step #7 Place pineapple, sweet potatoes, & sausage in 8x8x2 inch casserole dish.
  • Step #8 4.
  • Step #9 Combine sugar, cornstarch, & salt in saucepan.
  • Step #10 Gradually add pineapple juice/water, & stir until mixed.
  • Step #11 5.
  • Step #12 Cook, stirring constantly, on med/low heat until it thickens & comes to a boil.
  • Step #13 6.
  • Step #14 Boil for 1 min, stirring constantly.
  • Step #15 7.
  • Step #16 Remove from heat & add butter until melted.
  • Step #17 8.
  • Step #18 Pour over sausage mixture in casserole dish.
  • Step #19 9.
  • Step #20 Cover up & bake 35-40 mins at 350 degrees.
  • Step #21 10.
  • Step #22 Serve over rice.
