Diabetic Strawberry Shortcake Recipe

Ingredients
  • Whipped topping .
  • 2/3 c milk .
  • 6 tsps artificial sweetener .
  • 1/2 tsp salt .
  • 1 tsp vanilla .
  • 2 c flour .
  • 1/2 c butter or margarine .
  • 3 tsps artificial sweetener .
  • 4 c strawberries, slices .
  • 1 egg, beaten .
  • 1/2 pint whipping cream .
  • 1 tbsp baking powder

Directions
  • Step #1 In a large bowl, mix flour, baking powder & salt.
  • Step #2 Cut in shortening.
  • Step #3 Mix in egg.
  • Step #4 Add 1/3 c milk.
  • Step #5 Slowly add as much milk as needed to make a non-sticky dough.
  • Step #6 Pat dough out on floured surface.
  • Step #7 Cut rounds with biscuit cutters or drinking glasses.
  • Step #8 Place on ungreased cookie sheet & bake for 10 mins 450F til lightly browned.
  • Step #9 Split in half.
  • Step #10 If desired, spread each half with butter.
  • Step #11 Sprinkle top artificial sweetener over strawberries & mix well.
  • Step #12 Spoon strawberries over biscuit halves.
  • Step #13 Top with whipped topping.
