Step #1 Peel & grate the potatoes-work quickly or they will go pink then black very quickly.
Step #2 Squeeze as much moisture as you can from the potatoes, then add the eggs, flour salt & pepper & mix well.
Step #3 I like a lot of salt & pepper as they can be a bit bland otherwise.
Step #4 Heat about 2 tbsps of butter in a frying pan over medium to high heat.
Step #5 When the butter is foaming, drop spoonfuls of the mix into the pan (about 3 tbsps per cake).
Step #6 I can usually fit about 5 or 6 of these potato cakes in my pan.
Step #7 Flatten each cake a little then cook for about 5-8 mins aside, turn & repeat.
Step #8 Remove to a warm dish & repeat with more butter & remaining mixture.
Step #9 It's really important to cook these right through as they are pretty yucky if the potato is still raw,.
Step #10 My mum used to add diffeent herbs, cheese, ground beef, but I always prefered them plain, what ever she had on hand, bacon, with a sprinkle of vinegar over them or mayo.
