Diabetic Strawberry Blintzes Recipe

Ingredients
  • 1 c flour .
  • Pancakes .
  • 2 tsps cornstarch .
  • 14 tsps artificial sweetener .
  • 1 1/4 c milk .
  • 6 tsps artificial sweetener .
  • 2 c frozen unsweetened strawberries, thawed .
  • 1/2 tsp salt .
  • 1 (3 oz) package cream cheese, softened .
  • 1 tbsp oil .
  • 1 c cottage cheese .
  • 1 egg .
  • 1 tbsp lemon rind .
  • 1 tsp baking powder .
  • 3 tbsps water .
  • 1/4 tsp almond extract .
  • Filling .
  • Strawberry Sauce

Directions
  • Step #1 Pancakes:.
  • Step #2 Combine all ingredients.
  • Step #3 Batter should be thin so add more milk if needed.
  • Step #4 FILLING:.
  • Step #5 Puree cottage cheese & cream cheese in mixer.
  • Step #6 Add lemon rind & juice.
  • Step #7 Place in top of double boiler over hot water.
  • Step #8 Cover up.
  • Step #9 Stir every once in awhile.
  • Step #10 Prepare strawberry sauce:.
  • Step #11 In heavy saucepan cook strawberries in 2 tbsps water over med-heat/flame til soft.
  • Step #12 Dissolve cornstarch in 1 tbsp of cold water.
  • Step #13 Add to strawberries & cook, stirring constantly, until mixture thickens.
  • Step #14 Stir in almond extract.
  • Step #15 Remove from heat.
  • Step #16 Stir in artificial sweetener.
  • Step #17 Prepare pancakes:.
  • Step #18 Fry six large pancakes, one at a time.
  • Step #19 Stack with paper towels between pancakes.
  • Step #20 Stir artificial sweetener into hot filling.
  • Step #21 To serve, place a spoonful of filling on each pancake.
  • Step #22 Roll pancake around filling, placing edges underneath.
  • Step #23 Spoon warm strawberry sauce over blitzes & serve as soon as possible.
