Ingredients
8-12 large boston lettuce leaves .
1 garlic clove, crushed with press .
1 tbsp fresh ginger, peeled & grated .
1/2 c sliced water chestnuts, sliced .
1/4 c dry roasted peanuts, coarsley sliced .
1 tsp sugar .
3 tbsps soy sauce .
1 lb ground chicken (or ground turkey) .
2 stalks celery, medium sized, sliced .
1/8 tsp crushed red pepper flakes
Directions
Step #1 In c, crushed red pepper, mix soy sauce, sugar, ginger, & garlic & set aside.
Step #2 Heat a nonstick 10-inch skillet over medium-high heat until hot.
Step #3 Add chicken (or turkey) & cook 4-5 mins or until no longer pink, breaking up the meat with side of spoon.
Step #4 Add celery to chicken in skillet, & cook 2 mins, stirring every once in awhile.
Step #5 Add water chestnuts & soy sauce mixture; cook 1 min to mix flavors & then stir in the peanuts.
Step #6 Divide the mixture among lettuce leaves.
Step #7 Fold the leaves over the mixture & eat out of hand (like a roll up).
