Mayan Chicken W/ Spicy Orange Paste Recipe

Ingredients
  • 2 tbsps anchiote oil (annato, or mix vegetable oil with 1 tsp paprika) .
  • 2 tsps ground cumin .
  • 3-4 garlic cloves, sliced .
  • 2 tsps dried oregano .
  • 2 tbsps cilantro, fresh, sliced .
  • 1/2 tsp salt .
  • 1/4 c grapefruit juice .
  • 1-4 tsp minced habaneros (or use jalapenos) .
  • 1/2 tsp fresh ground pepper .
  • 1/2 c bitter orange juice (or 1/4 C orange juice C grapefruit juice) .
  • 1 tbsp red wine vinegar .
  • 1 1/2 lbs chicken breasts (I use boneless, skinless breasts cut into wide stips) .
  • 1 tbsp lime juice

Directions
  • Step #1 Combine everything except the chicken & whisk until well mixed.
  • Step #2 Add chicken & coat throughly.
  • Step #3 Cover up & chill 2-4 hrs or overnight.
  • Step #4 Stir once in a while.
  • Step #5 Grill over medium to hot oiled grill 5-7 min on each side until chicken.
  • Step #6 is white in the center.
  • Step #7 Serve with beans & rice.
